The Plant Paradox by Steven R. Gundry
The Hidden Dangers in 'Healthy' Foods That Cause Disease and Weight Gain
This book argues that a class of plant proteins called lectins — found in legumes, grains, nightshades and some fruits — can harm the gut lining, trigger inflammation and contribute to weight gain and chronic illness, and therefore recommends avoiding or minimizing high-lectin foods. It lays out a dietary protocol that eliminates or restricts those foods, emphasizes preparation techniques (soaking, peeling, pressure-cooking, fermenting) to reduce lectin content, and promotes nutrient-dense, low-lectin choices such as leafy greens, certain vegetables, pasture-raised animal products and healthy fats. The plan also includes phased reintroduction to identify individual sensitivities and recommends specific supplements and lifestyle changes with the goal of improving digestion, reducing inflammation and supporting weight loss.
