    This book argues that a class of plant proteins called lectins — found in legumes, grains, nightshades and some fruits — can harm the gut lining, trigger inflammation and contribute to weight gain and chronic illness, and therefore recommends avoiding or minimizing high-lectin foods. It lays out a dietary protocol that eliminates or restricts those foods, emphasizes preparation techniques (soaking, peeling, pressure-cooking, fermenting) to reduce lectin content, and promotes nutrient-dense, low-lectin choices such as leafy greens, certain vegetables, pasture-raised animal products and healthy fats.
